Fun Thai Noodles
Prep Time - 15 Minutes Serves:
8 oz. dried pasta (spaghetti or linguine, broken in half) I would suggest using whole weat noodles or rice noodles if your kids are allergic to gluten.
2 Tbsp. smooth peanut butter
1 SunkistĀ® orange -grated peel and juice
1 Tbsp. soy sauce
1 small clove garlic, pressed
1 SunkistĀ® orange , peeled, cut into bite-size pieces
2 Tbsp. green onions, thinly sliced
To make one portion:
Cook pasta just until tender; drain in colander. In same pot, combine peanut butter, orange peel and juice, soy sauce and garlic; stir over low heat for a minute or two.
Remove from heat, add cooked pasta and toss to coat.
Add orange pieces; toss gently. Serve on warm plates with green onions sprinkled on top.
Makes 4 servings

homemade bagel bites
I cook with teens alot and this is always one of their "faves"! To make it healthy we use whole wheat bagels, add veggies like shredded green pepper, diced tomato, black olives and we use reduced fat mozzarella. We use plain tomato sauce and add garlic and Italian seasonings.
Berry Nutty Parfait
I have five kids, all different ages....it's an easy favorite!!
Banilla Yogurt (Made by Stonyfield, loaded with immune boosting probiotics)
Chopped Walnuts (Full of the Omegas!)
Blueberries, Raspberries, Strawberries (Some from the garden and some from the Farmer's Market! Full of vitamins and antioxidents!)
Pick your favorite bowl or dish, scoop in the yogurt, stir in berries, sprinkle with walnuts. For tough customers a few chocolate or carob chips can seal the deal, but go easy on amounts! Great for parents and kids on those berry nutty days!
